This dish is simply amazing. The sweet and sour sauce in combination with vegetables and rice is a perfect meal. This is a great meal for people wanting to increase raw food consumption. For those who want to maintain a full raw diet, substituting parsnip rice works very well with this dish. We like forbidden rice due to the high nutrient profile!
Forbidden Rice Ingredients:
- 1 cup forbidden rice
- 3 cups of vegetable stock (I use veggie stock powder)
- 1 large tomato
- 1 1/2 cup pineapple, chopped
- 1 large red bell pepper, diced
- 1 cup fresh shelled peas
- 1 cup fresh raw sweet corn
- 1/4 cup chopped sweet onion
- 1/2 cup chopped cilantro
Sweet and Sour Sauce: (RAW)
- 1/4 cup apple cider vinegar
- 1/4 cup Thai Coconut Sugar
- 2 tbsp coconut aminos
- 1/4 cup sun-dried tomatoes
- 2 dates
- 1 tsp lime juice
Forbidden Rice Instructions:
- Cook forbidden rice in three cups vegetable stock for approximately 30 minutes until rice is al dente and has absorbed all liquid.
- Chop pineapple, vegetables and shell peas.
- After rice has cooled to room temperature add vegetables and fruit to rice and stir.
Sweet and Sour Sauce Instructions:
- Place all ingredients in high speed blender and blend until thick and creamy.
- Stir sauce into forbidden rice mixture and enjoy!
