This ice cream was created do to outstanding avocados in my house and I haven’t looked back since. This ice cream is cream, decadent, sweet and minty! It’s the perfect summer treat!
Ingredients:
- 2 cups pine nut milk infused with 1 cup fresh mint leaves
- 2 medium avocados
- 1 tsp vanilla
- 1/4 cup maple syrup or sweetener of choice
- 1/16 tsp Himalayan sea salt
- 1/2 cup chocolate chips (I use Enjoy Life Foods) – For raw – leave out or substitute home made raw chocolate
Instructions:
- Blend one cup of pine nuts and 2 cups water in high speed blender. Add fresh mint leaves and refrigerate over night.
- Place avocados, vanilla, maple syrup, sea salt and pine nut milk with mint leaves in high speed blender. Blend until smooth and creamy.
- Add chocolate chips and pulse to break down chips.
- Place in ice cream maker and follow factory instructions.
- Serve fresh from ice cream maker or freeze.
